If you’ve been reading this blog for a little while, you will have noticed I liked roasting veggies. (Veggie Roast, Roasted Veggies) This time I used a cast iron griddle to add the grill marks.
I baked this combination at 350F
- baby eggplant
- red bell pepper
- purple bell pepper
- red onion
- garlic
- baby carrots
- brussel sprouts
No need for any oil or spices. The flavors worked really well together. Roasting veggies is a great way to get something tasty when you’re feeling lazy. What is your favorite combination?
people who think they don't like veggies (imagine???) have obviously never tasted them roasted. nothing tastes better!
