Healthy Vegan Breakfast

I love spoiling my wife with a fancy breakfast whenever possible. She loves my tofu scramble, and we are both addicted to kale lately. The above was born in less than 30 minutes.

This healthy breakfast features whole wheat cinnamon raisin bread, kale and baby carrots sautéed with ginger, and a flavorful tofu scramble.

What do you make when you indulge on breakfast?

  1. Nice pic!! I can pig out on a huge bowl of John McCann's Steel Cut Irish Oatmeal. I can eat it every day. To make it sinfully delicious, I like to line the bowl with blueberries and top with honey, coconut milk and a side of toasted rice bread topped with an every so thin layer of peanut butter.

  2. Sojourner: I'm going to have to get some steel cut oats you keep raving about. I'd probably replace the blueberries with raspberries though. ;)
