Last Week in Tastiness

Looking over this last week’s photos, I realized I spent more time cooking than going out. A nice change. The waffles above I made from scratch. My girlfriend loves waffles, so I bought a waffle iron and set out to learn to make them.

The waffles above were made from whole wheat flour without any oil or added sugar. I used applesauce and dates as a replacement for both. It worked well. I’d like to get the texture a bit fluffier before I post the recipe though. The sauce is raspberry. It was delicious.

I’ve also been on a Brussels sprouts kick. I like cutting them in half and roasting them in the oven for 25ish minutes at 350. With a dash of salt, they make a great snack.

I had this tomato quinoa vegetable soup a few times for lunch. I bought it at Costco. I would buy it again. It was quite tasty with a decent amount of vegetables.

Green curry from big bowl was good. I had it with some brown rice. It was a touch spicier than I would have liked. They said it was spicy, but I didn’t expect it to be so spicy. The brown rice did a nice job of cutting the heat along with the fresh ginger soda.

I had at least one smoothie each day this week. Most of them were a combination of half greens and half fruit except for these two. The one on the left was avocado, cocoa, dates, vanilla, and broccoli; it was good, but needed the sweetness of medjool dates instead of deglet noor. The one on the right was inspired by Chicago vegan mania. It’s a combination of sweet potato, avocado, mango, dates, pumpkin pie spice, vanilla, and lime juice. It’s one of my current favorites.

    We haven't been doing smoothies lately. Hard to get in the smoothie mood in blah weather.

    When I make waffles, which isn't often I also use a recipe that doesn't have any oil. I like a spoon of sugar in the raw added to the batter though to caramelize as it cooks.

  2. It all looks pretty good. The waffles looks like it has a nice crispy outside. Oven roasted brussel sprouts are a popular option around here but I usually add olive oil and roast them on the grill.

    "Big Bowl" is a brand?
