Our local co-op makes delicious cookies with cranberries, nuts, and oatmeal. At a $1.39 each it was getting to be an expensive habit, so I tried my hand at making them myself.
I looked around for some inspiration and found a recipe to start with on EverydayDish – Julie’s Oatmeal Cookies. I don’t have a mixer, so I did everything by hand. I followed the rest of the recipe very closely.
I was curious when she just mentioned two sticks of earth balance without having another measurement. I used the two sticks I had, but it wasn’t as creamy as in the video.
I swapped the chocolate for craisins and added 1 cup of walnuts. I ended up adding around 1/4 to 1/3 of a cup of water to get batter. Without the water, I had a loose, pre-granola substance that wouldn’t form into cookies.
They baked up great and made about 28 cookies. My wife loves them. When she came home and found them, she inhaled two right on the spot. She said they are so good because they aren’t too sweet. They got better overnight. I was surprised how good they tasted the second day. Tasty!
