Sautéed Spinach with Garlic

Spinach and Garlic

A quick way to get some dark leafy greens into your meal. We just ate this spinach with tempeh. Tasty!

To prepare heat up a pan and spray a small amount of olive oil. Slice the garlic thinly (1 or 2 cloves) and add to the pan when it is warm. Stay with the garlic as it will cook quickly when cut thin. Keep cooking it until it turns a nice golden brown, and then add a pound of spinach. It will cook in just a few minutes. Keep stirring it until it looks like the above. Serve and enjoy!
