Extra Bananas? Make Bread!

Ripe Banana

After our regular weekend shopping we had some extra bananas in the kitchen. The ones from last weekend were getting very ripe and just begging to be made into something. Have extra bananas? Make bread of course!

Following my recipe for Banana Bread with Walnuts, I made a double batch. We had one full sized loaf and then several little ones. Wow! The house smelled great. So moist and tasty. I need to go have another slice before I can finish this post. The photos are making me hungry!

Some might say summer is the wrong season to bake. I say, tastiness doesn’t need to wait especially for the weather.

PS: I loved these pictures so much I updated the original recipe post to use them. The old one is so sad in comparison, I had to delete it.

    I have a hard time trying banana bread recipes. I have my mom's recipe that I've used since I was a kid that I modified for vegan and I haven't been adventurous enough to try another. It is the only one I know of where I can beat the heck out of it in my KitchenAid mixer as opposed to just barely stirring.

    1. it is quite good and very popular with the folks at work who commented they couldn't believe it was vegan. lol.

      i don't get using a mixer on a recipe like this. so easy to stir by hand. let me know if you do actually try it.

  2. Beautiful photos! I've never made banana bread before, but I've been saving my overly ripe bananas in the freezer. It looks like all I need is apple sauce.

    1. Thanks! If you don't have applesauce, just toss a couple apples into the blender after coring them. Instant applesauce.
