First, I made some cajun yam fries from my recipe page. Some yams cut up and dusted with some cajun seasoning and salt before being baked.
The star of the show though was the tofu benedict with hollandaise sauce (linked). I modified it slightly by replacing the steamed spinach with fresh sunflower microgreens. The sunflower greens really made the dish pop for me.
Backing up the deliciousness, was a pile of blueberry pancakes with maple syrup. Yum!
