I had been craving pancakes for a few days, and when I saw a tweet about making pancakes I knew what I had to do – pancakes for dinner! I looked around the internet for recipes and found a couple that I combined to create these. They are surprisingly fluffy for being 100% whole wheat.
Whole Wheat Pancakes
Spicy Hashbrowns
This really hit the spot tonight. Hashbrowns are great by themselves, but with the salsa the taste has more depth. It is spicy and savory with crisp hashbrowns and small pieces of left over vegan tenders. Just before it finishes cooking on the griddle, add hot salsa. Then cook for a few more minutes until crispy again. My wife couldn’t believe I only added salsa. She thought for sure I added lots of spices. Sometimes simple is the best solution. I love how the house smells like salsa and hashbrowns now. Tasty!
Tasty Vegan Breakfast
I made this breakfast for my wife this morning. She is so spoiled! I started with some hashbrowns on the skillet. After the hashbrowns cooked, I drained a can of black beans and mixed in some salsa. I cooked those on the same skillet until the liquid was gone. Served with some watermelon and asian pear with a glass of fresh orange juice to wash it down. Tasty!
Sautéed Spinach with Garlic
A quick way to get some dark leafy greens into your meal. We just ate this spinach with tempeh. Tasty!
Pistachio Butter
This is my entry for the September The Recipe Redux. The theme this month is "Dressing for Success" - condiments, spreads, and salad dressings. The goal is to make a regular recipe more healthy by incorporating more whole foods, less saturated fat, etc.
Rosemary Olive Bread
I originally saw this bread via a tweet from VeganPatriot talking about a recipe on happyherbivore. VeganPatriot had modified it to work in his bread machine. It sounded really delicious. I went straight to the store and bought some rosemary, and set about making it myself.
Veggie Roast
The temperature has come down and the farmer’s markets are bursting with tasty veggies. A perfect time to roast with the oven. This recipe takes a few minutes of prep and a while to bake, but while baking the whole house will smell great!
