Today, I start the first of three courses at eCornell: TCC501 Nutrition Fundamentals with the goal of completing a certificate in plant based nutrition.
They are all online courses, and I hope to complete one per month for the next three months. While they have no direct relation to my job or career, I hope they will make me more informed.
Nutrition Fundamentals focuses on the following topics:
- State of Health
- Protein, A Revered Nutrient
- The China Project
- Nutrient Fundamentals I
- Nutrient Fundamentals II
- Fat, A Less Revered Nutrient
I’m excited to start. I’ll report back later with my thoughts on the course and eventually the certificate.
I will be watching your progress and I'm looking forward to your thoughts on the courses and what you've learned.
ReplyDeleteliking the course so far. a bit more work than i expected, but i am managing. short version is whole food plant based diet. see the video in my latest post for a sample of what the class is like.
DeleteI'm lurking with Lady Trobairitz and watching.
ReplyDeletegood course so far. I'll talk your ear off next time we chat :)
DeleteI'm really interested in what you think. Keep us updated! I've been wanting to get some kind of plant-based certificate just in case I ever want to have a little vegan life coaching business or something. How fun would it be to help people veganize their favorite meals and show people all of your favorite vegan products and recipes?! I've been really interested in the Main Street Vegan Academy: http://mainstreetvegan.net/academy/
ReplyDeletevegan food coaching would be cool. I could get into that. I love talking about food and health right now... if only i could get paid for it! lol.
Deletethe academy you linked looks very interesting, but I don't know how i'd fit in. I don't live the full vegan lifestyle - just diet. maybe i could be a whole foods plant based diet coach, but that is waaaay to long to say. hehe.
I completed this course last year. I learnt so much and its given me the confidence to talk about plant based nutrition with conviction and knowlege.
ReplyDeleteThat's really great. I am learning a bunch with just the first class. I'm glad i signed up for. thanks for taking the time to comment.
