Rouxbe Professional Plant-Based Course Task #5

Rouxbe Task #5

This week I started my Rouxbe Professional Plant-Based Certification Course. It is going to be intense. There are over 400 tasks to complete in about six months. It has started off with a lot of reading and background information along with learning to use the class platform. I am really excited to be taking the course!

Rouxbe Task #5

I hope the course will improve my cooking skills and give me some new inspiration for recipes. I switched from the Forks Over Knives course to the Pro course. I am excited to get a deeper education, however they weren’t kidding when they said to expect 12-15 hours of homework a week! It is a lot of stuff.

This post has some photos from my first cooking assignment. It was to learn t use the photo upload feature. They wanted us to make a “go-to dish”. Something we make often. I nearly made my groundnut stew, but then realized I didn’t have any bell pepper.

Rouxbe Task #5

I make this peanut butter and chocolate roti a couple times a week, so it also seemed like a good fit. The task was to take three photos and upload them for review. One Mise en Place, one in progress, and one finished product.

The next few sections are about setting up the kitchen and learning about plant-based nutrition. The nutrition section is a bit of a review because of my plant-based nutrition certificate I completed at eCornell a few years ago. I am liking the review. It’s good to get those positive messages reinforced from new sources. One of the extra readings in class is from a public paper. You can read it here: http://www.thepermanentejournal.org/files/Spring2013/Nutrition.pdf

Stay tuned, I will be posting more of my experiences with the Rouxbe class as I progress. The next assignment is all about kale. Yum!

  1. Looks great! And I'm envious. I'm signed up for the basic course, but it doesn't start until September 9.
