Nectarine Cobbler

What to do when you have extra ripe Nectarines laying around? Make some cobbler. We had purchased a large box of white nectarines from Costco earlier in the week and it became obvious we were not going to be able to finish them before they went bad. Give them away or make cobbler. Easy choice!

While making this, Laura and I started drinking some Sapsucker Farms Yellow Belly hard cider. We both thought it would be a great idea to add some to the cobbler. It was a good idea! If you don’t want to use cider, you could sub in water or a non-dairy milk like almond or soy. Sprinkling a little cinnamon on top before serving was also tasty.

Ingredients
  • Filling:
    • 4 cups sliced nectarines (about five)
    • 1/2 cup hard cider
    • 1/3 cup raw sugar
    • 1 tablespoon cornstarch
    • 1 tablespoon olive oil
  • Topping:
    • 1 cup whole wheat flour
    • 1/3 cup rolled oats
    • 2/3 cup raw sugar 
    • 1 1/2 teaspoons baking powder
    • 1/2 cup hard cider
    • 4 tablespoons softened vegan butter
Directions
  1. Preheat oven to 350 degrees.
  2. Mix the filling ingredients in a bowl. Place filling in a glass baking pan 9x13”.
  3. Mix the topping in a large bowl.
  4. Spread topping evenly over the filling.
  5. Bake for about 35 minutes or until the topping is golden brown.
  6. Serve and Enjoy!

  1. Yumm! That looks so good, and so does the cider. I am not a fan of beer, but I do enjoy hard cider.

    1. I am with you on preferring Cider > Beer. We will have to experiment some more baking with cider. yum yum
