Last Week In Tastiness

This last week seems to have been inspired by Mexican themes. The tacos above were something we quickly whipped up at home using some cheap, locally made corn tortillas, spinach, black beans, salsa, and cilantro.

Continuing the theme, above are heuvos rancheros from Hard Times Café. They are my favorite entrée there.  I have had this dish so many times, I can’t count how many. They cooked the tortillas longer to make them slightly crunchy. yum! The tofu was also well done.

brownie

A delicious vegan brownie from a co-worker. His wife baked, so he was kind enough to share. I am really enjoying having a co-worker who brings in treats I want to eat. It has been a long time.

Indurrito from Hot Indian Food Truck. They made a burrito out of a roti and filled it with chickpea curry. Yum!! They are a bit pricey, but so worth it. I was on my way to chipotle when I spotted the truck; it was a pleasant surprise. 

smoothie

My new favorite smoothie above. Blueberries, strawberries, raspberries, cherries, pineapple, and almond milk! The berries all work really well together. I am essentially combining three different bags of frozen fruit from Costco. The new kind has the blueberries, strawberries, and raspberries already combined. It is a nice mix even on its own.

Finally, this delicious and unique dessert from the CAA banquet: strawberry shortcake kebabs. The shortcake was put into the container and it worked like one of those freeze pops. Push up from the bottom and the shortcake come out the top. It make them entirely too easy to eat. It was easily my favorite sweet treat of the week.

  1. Pretty nice selection of dishes. No guacamole on the tacos? The only dessert this week was some cake topped w/thawed frozen strawberries.
