We tried a new pizza place last week: Pizza Nea. They are located in NE Minneapolis and very active on twitter. We ordered the marinara with garlic and red sauce. Then we added some roasted red and yellow peppers and some arugula. It came out very fast and was delicious. Sadly, they didn’t have a vegan dessert, so we went down the street for some muffins.

I got some new veggies burgers at Costco that were made with kale, so I had to try them out. I made some hash brown waffles as the burger bun. They turned out really delicious. I think I will have to make this a thing. They are labor intensive, but so worth it. Cook shredded potatoes and then put them into a waffle iron to crisp them up. I might dedicate a post to them I like them so much. We’ll see how ambitious I get.

My friend made me a dinner of stuffed pasta in a cheesy cashew sauce with a side of steamed broccoli. It was delicious; I enjoyed the sauce. It was made from cashews, soy milk, Dijon mustard, and roasted garlic.

Some chocolate raspberry cupcakes to round out the post with a sweet treat. I bought these at Hard Times Café. They are super reliable for having inexpensive, amazing baked goods 22 hours a day. The cupcakes were tasty.
