Last Week In Tastiness

This last week was a filled with lots of tasty simple foods many I didn’t take a picture of. These are some of my favorites.

The above salad was created rather haphazardly at the Lunds salad bar. I got a bit carried away and tried to fill the container. I started with kale and red spinach followed up with a variety of veggies. I expected to stop here. I didn’t really look ahead very carefully. After the veggies, came the beans, dried fruits, fresh fruits, nuts, and seeds. I pilled them all in until the box was full and heavy. It was nearly a pound and a half (~0.6kg). I ate it all, and it was delicious.

The above are my Cajun Yam Fries. They are super simple to make, click the link to see how. I ate an entire pan. So delicious. I should be making some more now.

Last Week In Tastiness

I had the mixed veggies in this shot three times for lunch this week and several times for dinner last week. I eat about 1/2-3/4 of a pound in a sitting. Filling and delicious. I’ve been adding 1/2tsp turmeric, 1tsp of organic no-salt (2o spices mixed from Costco), and a pinch of Himalayan pink salt. The spices transform the otherwise pedestrian frozen veg into awesomeness bursting with flavor. They are my current lazy go to. Tastiness in less than five minutes from freezer to mouth.

I had two really delicious desserts this week. The cookies above are from my friend Mistress Ginger - “May Day Cookies”. They are oatmeal chocolate chip with big coconut flakes. Yum!

Last but not least, my favorite restaurant, Gorkha Palace, after months of pestering, has a vegan dessert: coconut kheer. Coconut kheer is a sweet, chai-spiced pudding made from rice. I’ve tried making it a few times with mixed results. They are still experimenting with their recipe, but I still really liked it. My girlfriend did too.

  2. That coconut dessert looks really tasty.

    Hubby's birthday was on the 23rd and I found him vegan chai cupcakes at our local co-op. Yummy!
