Spiced Chickpeas and Spinach

This tasty dish is an easy favorite. We frequently use it as a go-to recipe for potlucks or other social events. Other people really enjoy it, and it is quick and easy for us to make. The recipe easily doubles. We like to serve it over brown rice.

Spiced Chickpeas and Spinach

Ingredients

  • 1 can chickpeas (drained and rinsed)
  • 1 can diced tomatoes
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon Garam masala
  • 1/8 teaspoon turmeric
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon black pepper
  • 8 oz. fresh spinach
  • 1/2 cup chopped cilantro

Method

  1. In a large pot, mix in tomato, chickpeas, and all the spices. Bring to a boil.
  2. Summer for 10 minutes on medium-low heat. If the gravy is too thick, add 1/4 cup of water.
  3. Turn off the heat, and stir in cilantro and spinach.
  4. Serve and Enjoy!
